Classic Vinaigrette
A timeless dressing with the perfect balance of oil and vinegar.
Ingredients
- 3/4 cup extra virgin olive oil
- 1/4 cup vinegar (red wine, white wine, or balsamic)
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh herbs (thyme, oregano, or basil)
- Salt and pepper to taste
Instructions
- In a small bowl or jar, combine the vinegar and Dijon mustard.
- Slowly whisk in the extra virgin olive oil until the mixture is emulsified and smooth.
- Add fresh herbs, salt, and pepper. Whisk to combine.
- Taste and adjust seasoning as needed. Store in an airtight container in the refrigerator for up to one week.
Notes
For best results, use high-quality extra virgin olive oil. Shake well before each use as the dressing may separate when stored.
