Classic Vinaigrette

A timeless dressing with the perfect balance of oil and vinegar.

Ingredients

  • 3/4 cup extra virgin olive oil
  • 1/4 cup vinegar (red wine, white wine, or balsamic)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh herbs (thyme, oregano, or basil)
  • Salt and pepper to taste

Instructions

  1. In a small bowl or jar, combine the vinegar and Dijon mustard.
  2. Slowly whisk in the extra virgin olive oil until the mixture is emulsified and smooth.
  3. Add fresh herbs, salt, and pepper. Whisk to combine.
  4. Taste and adjust seasoning as needed. Store in an airtight container in the refrigerator for up to one week.

Notes

For best results, use high-quality extra virgin olive oil. Shake well before each use as the dressing may separate when stored.
