Ladolemono – Greek Lemon-Olive Oil Dressing
Ladolemono (Λαδολέμονο) is a staple in Greek cuisine, known for its bright, citrusy flavor and smooth yet peppery finish. The key to an exceptional Ladolemono is high-quality extra virgin olive oil, making Argilos I (Early) and Argilos II (Green) ideal choices. Their bold intensity and rich polyphenol content enhance the dressing, giving it a vibrant, well-balanced taste.

Each component plays a crucial role in creating the perfect balance of flavors and textures.
Ladolemono – Greek Lemon-Olive Oil Dressing
Ingredients
- ½ cup Argilos Extra Virgin Olive Oil (I Early for a robust, grassy punch or II Green for a bold, peppery bite)
- ¼ cup freshly squeezed lemon juice (about 1 large lemon)
- 1 teaspoon dried Greek oregano
- 1 small garlic clove, minced (optional, for extra depth)
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper

Instructions:
- In a small bowl or jar, whisk together the lemon juice, salt, pepper, and oregano until combined.
- Slowly drizzle in the Argilos EVOO, whisking continuously until the mixture emulsifies into a smooth, velvety dressing.
- If using garlic, add it now and whisk again.
- Taste and adjust seasoning if needed.
- Use immediately or store in an airtight container in the refrigerator for up to 5 days. Shake well before use.

Serving Suggestions
- Seafood – Drizzle over grilled branzino, shrimp, or octopus for a fresh Mediterranean finish.
- Grilled Meats – Pairs beautifully with lamb chops, chicken souvlaki, or pork skewers.
- Vegetables – Toss with roasted potatoes, steamed greens, or grilled zucchini and eggplant.
- Marinades & Dips – Use as a marinade for meats or as a dipping sauce for fresh bread.

ARGILOS I Early or ARGILOS II Green
For a grassy, robust, and high-antioxidant flavor, use Argilos I (Early). If you prefer a peppery, slightly bitter intensity, Argilos II (Green) will add a powerful kick to your dressing. Both options create a bold, health-boosting ladolemono perfect for any dish.
