Ladolemono (Λαδολέμονο) is a staple in Greek cuisine, known for its bright, citrusy flavor and smooth yet peppery finish. The key to an exceptional Ladolemono is high-quality extra virgin olive oil, making Argilos I (Early) and Argilos II (Green) ideal choices. Ladolemono – Greek Lemon-Olive Oil Dressing
Ingredients
- ½ cup Argilos Extra Virgin Olive Oil (I Early for a robust, grassy punch or II Green for a bold, peppery bite)
- ¼ cup freshly squeezed lemon juice (about 1 large lemon)
- 1 teaspoon dried Greek oregano
- 1 small garlic clove, minced (optional, for extra depth)
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper

Instructions:
- In a small bowl or jar, whisk together the lemon juice, salt, pepper, and oregano until combined.
- Slowly drizzle in the Argilos EVOO, whisking continuously until the mixture emulsifies into a smooth, velvety dressing.
- If using garlic, add it now and whisk again.
- Taste and adjust seasoning if needed.
- Use immediately or store in an airtight container in the refrigerator for up to 5 days. Shake well before use.
