Ingredients

  • 200g (7 oz) feta cheese, crumbled or cubed
  • 2 medium tomatoes, diced
  • 1 bell pepper, sliced
  • 1 hot chili pepper, sliced (adjust to taste)
  • 1 tsp dried oregano
  • 2-3 tbsp ARGILOS I Early Extra Virgin Olive Oil

Instructions

1. Preheat your oven to 180°C (350°F).

2. In a small to medium-sized baking dish, place the feta cheese in the center. Arrange the diced tomatoes, sliced bell pepper, and sliced chili pepper around the feta.

3. Sprinkle the oregano over the top.

4. Drizzle generously with EVOO.

5. Bake for 20-25 minutes, or until the tomatoes have released their juices and the peppers are softened.

6. Serve hot, garnished with fresh parsley or additional oregano if desired, with crusty bread or pita for dipping.

Note: For a milder version, omit the hot chili pepper or replace it with another bell pepper.
