Ingredients

  • 1 onion, chopped
  • 3 green onions (scallions), chopped
  • 1 carrot, diced
  • 3 potatoes, peeled and cubed
  • 2 cups green peas (fresh or frozen)
  • 1 cup tomato sauce
  • 2-3 tablespoons olive oil - ARGILOS III RIPE
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • Water (enough to cover the ingredients)

Instructions

1. Sauté the onions: Heat 2-3 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and green onions, and sauté them together until they begin to soften, about 5 minutes.

2. Add the vegetables: Add the diced carrot and cubed potatoes to the pot. Sauté them with the onions for another 5 minutes, stirring occasionally.

3. Incorporate the sauce: Pour in 1 cup of tomato sauce and stir well to combine with the vegetables.

4. Add the peas and seasonings: Stir in 2 cups of green peas, then add enough water to just cover the ingredients. Stir in 2 tablespoons of chopped fresh dill, and season with salt and pepper to taste.

5. Simmer the stew: Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20-30 minutes, or until the potatoes and peas are tender.

Serve: Once the vegetables are cooked through, taste and adjust the seasoning if necessary. Serve hot.
